Fred’s Boerewors Stew
 
Ingredients:
1Kg Fred’s Boerewors
2 Cans diced tomato & onion
2 Onions
1 Tbsp Butter
1 large carrot
Small bag of baby potatoes
Small bag of mushrooms
 
Directions:
1.      In a large pan or pot cook Fred’s Boerewors on medium heat, turn up heat towards the end to brown skin
2.      In the meantime, cut potatoes and carrots into 1 inch pieces and boil until soft
3.      Cut an onion into slices
4.      Cut mushroom into small chunks
5.      Remove Fred’s Boerewors and set aside
6.      Using the same pan or pot, sauté onions in butter until soft
7.      Cut Fred’s Boerewors into 1 inch pieces and add to onions
8.      Add cans of diced tomato & onion and mushrooms
9.      Strain potato and carrots and add to mixture
10.   Leave to simmer on a low heat
11.   Enjoy!
 

Smoorsnoek

1 Tbsp (15 ml) vegetable oil

2 medium onions, finely sliced

1 clove garlic, crushed

¼ tsp (1.25 ml) dried chilli flakes

500 g sweet potatoes, peeled and diced into 1 cm cubes

2 ripe tomatoes, seeded and diced

250 g smoked snoek, bones and skin removed and shredded

Juice of 1 small lemon

Handful of fresh coriander, finely chopped

Salt and pepper

Heat the oil and sauté the onions until softened and glossy. Add the garlic and chilli and fry for another minute.

Add the sweet potatoes, cover and cook over low heat for about 15 minutes, or until the potatoes are tender. Add

the tomatoes and cook for a further 5 minutes. Now add the snoek and heat through for a few minutes. Gently stir

in the lemon juice and coriander. Season to taste.

Serve with some extra slices of lemon.

Vryheid, Gelykheid en Boendoekos.

Maak dit in die oond, op die stoof of selfs op ’n vuur – soos potjiekos.

(4 porsies)

  • 40 ml olyfolie
  • 1 pak hoenderstukke met 4 boudjies en 4 dye
  • 6 klein piekeluitjies, gehalveer
  • 2 knoffelhuisies, fyngekap
  • 3 aartappels, geskil en in kwarte gesny
  • 3 wortels, in skywe gesny
  • sout en varsgemaalde swartpeper
  • 2 lourierblare
  • 1 bottel (340 ml) bier

Verhit oond tot 180 °C.

Verhit olyfolie in diep oondpan. Braai die hoenderstukke tot mooi bruin. Haal hoender uit pan en hou eenkant. Braai uie en knoffel in dieselfde pan vir sowat 10 minute. Pak hoender terug in pan saam met aartappels en wortels.

Geur met sout en peper. Voeg lourierblare en bier by. Maak toe met deksel en oondbraai sowat 1½ uur.

Wenk

Moenie die gereg roer nie – die hoender sal uitmekaar val. As dit lyk of dit wil droog word, kan jy nog bier byvoeg.

Mielie Brood - Corn Bread

Ingredients

  • 2 Eggs
  • 400g Koo cream Style Sweet Corn
  • 100g Grated Cheese
  • 250ml Self Raising Flour
  • Salt
  • 125ml Milk
  • 250ml Springbok Maize Meal

Method:

  1. *beat eggs and milk
  2. *add cheese and koo cream style sweet corn
  3. *gradually add the dry ingredients
  4. pour into oiled bread pan and bake in a pre heated oven at 185°C for 40 - 45 minutes.

 

 

Biltong Muffins

Ingredients

  • Biltong - finely chopped – 200g
  • Whole-wheat flour – 120g
  • Cake flour– 120g
  • Cheddar Cheese – 50g
  • Eggs – 3
  • Milk – 200ml
  • Cooking oil – 100ml
  • Baking powder – 30ml
  • Lemon juice – 15ml
  • Salt – 5 ml
    (Combine all the ingredients and mix lightly. Spoon into greased muffin pans and bake at 220° C for 11 minutes. Leave to cool slightly before removing.)

Serving Ideas
Serve biltong muffins with butter.

Biltong Spread

Ingredients:

  • Grated biltong – 60g
  • Smooth cream cheese with chives – 125g
  • Mayonnaise – 30ml
  • Lemon juice - 30 ml
  • Salt and black pepper
    (mix all the ingredients)

Serving ideas:
Serve the spread on a toasted sandwich or on slices of whole-wheat bread garnished with lemon or cucumber.
Spread on bread canapés (cut slices of bread into rounds or fingers, fry in cooking oil until golden brown and cool on a wire rack) garnisheed with sliced olives or gherkins.

 

Biltong Potbread

Ingredients

Dough

  • Cake flour - 240g
  • Milk - approximately - 100ml
  • Butter – 100g
  • Egg – 1 (beaten)
  • Baking Powder - 20ml
  • Salt - 2ml
  • Mustard powder - 5ml

Sift together the dry ingredients. Cut butter into the flour with a knife and then rub it in with your fingers until the mixture resembles dried breadcrumbs.
Beat the milk and egg together. Make a well in the flour mixture and add the liquid gradually. Mix quickly to a soft dough. Turn out onto a floured board and knead lightly until smooth. Roll out into a square approximately 10mm thick.

Filling

  • Ground Biltong - 120g
  • Smooth cottage cheese - 200g
  • Chopped parsley - 30 ml
  • Lemon juice – 15ml
  • Mayonnaise to moisten, black pepper to taste

Mix all ingredients together and spread over the dough keeping 25mm clear along the edges. Roll up dough like a Swiss roll and seal the edges with beaten egg and water. Wrap lightly in greaseproof paper and refrigerate for about 30 minutes. Carefully cut the dough into 25mm slices and arrange them - cut side down - on the bottom of a greased No.3 cast iron pot. Begin in the centre and arrange the remaining slices in a circle. Leave the sides of the pot clear to allow the dough to rise. Grease the inside of the lid with cooking oil or butter and cover the pot. Put the pot over a small fire - put a few small hot coals on the lid and bake for 20 - 30 minutes until the bread is golden brown and cooked.

Serving Instructions

Serve the bread with crisp vegetable sticks and lettuce leaves.

 

Krummel Pap

Ratio: (cups)
Mieliepap meel : water : salt
Putu/krummel 1 : 1 : ½ tsp
Stywe pap 1 : 2 : ¾ tsp
Slap pap 1 : 3 : 1 tsp

Stywe & krummel pap method:
1. “spray & cook” your pot
2. Boil water and pour into pot on high heat
3. Add salt
4. When water is boiling add meal (don’t stir)
5. Put a lid on the pot and set heat to “low”
6. Set timer for 30 mins
7. When timer goes off, stir with fork
8. Cover again and let cook for another 45 mins
9. Add butter, sugar and milk to taste for a breakfast or serve with your favourite meats

Slap Pap Method:
1. “spray & cook” your pot
2. Boil 2 cups of water and put in a pot on the stove on “high”
3. Add salt to the water
4. Mix 1 cup of water with meal and stir, it should be a “watery” consistency
5. When water is boiling in pot, add mixture to the boiling water
6. Whisk until smooth
7. Put lid on pot and turn heat down to “low”
8. Set timer for 30 mins, stir half way through
9. After 30 mins stir
WALLAH! Your slap pap is done
Add butter, sugar and milk to taste
 

Biltong Souttert

Bestandele:

  • 1 koppie gekerfde nat biltong
  • 4 snye witbrood (korsies afgesny)
  • 1 koppie melk
  • 2 eetlepels botter
  • 2 koppies gerasperde kaas
  • ½ koppie gekapte ui
  • 2 eiers
  • Pietersielie (na smaak)
     
  • Kook saam: melk, brood en botter
  • Laat afkoel.
  • Meng al die bestandele saam, gooi in ‘n vuurvaste tertbak wat met “cooking spray” gespiut is en bak vir ongeveer 45 minute teen 180ºC
     

 

Mince for various dishes

Ingredients:

500g Fred’s mince
1 can Can tomato
Woestersauce
1 ½ tsp Bisto
1 ½ tsp Sugar
½ cup Water
1 Onion
Salt

Method:

1. Slice an onion
2. ”spray & cook” your pan
3. Brown onion in pan on medium heat turning it now and then
4. Add Fred’s mince
5. Salt to taste
6. When almost brown add a bit of water to simmer until brown
7. Open can of tomato and put into bowl to cut into smaller pieces (or use tinned diced tomato)
8. Add 1 ½ tsp sugar, few shakes of woestersauce, 1 ½ tsp of Bisto and ½ cup water to tomatoes
9. Stir mixture into pan
10. Turn heat down to “low”
11. Simmer
12. Serve
 

Tomato & Onion sauce for pap

Ingredients:

1 can Diced tomato
1 ½ tsp Bisto
1 ½ tsp Sugar
½ cup Water
1 Onion
1 tsp Salt

Method:

1. Slice an onion
2. ”spray & cook” your pan
3. Brown onion in pan on medium heat turning it now and then
4. Open can of tomato and put into bowl to cut into smaller pieces (or use tinned diced tomato)
5. Add 1 ½ tsp sugar, few shakes of woestersauce, 1 ½ tsp of Bisto, 1 tsp salt and ½ cup water to tomatoes
6. Stir mixture into pan
7. Turn heat down to “low”
8. Simmer
9. Serve
